Ingredients

3 Tbsp. Apricot & Maple Sweet Pepper Jelly (Retired)
4 Tbsp. vegetable oil
¼ tsp. salt
1/2 tsp. Dijon mustard
4 cups spinach/arugula salad mix
¼ cup dried cranberries
1/4 cup walnuts
1/3 cup blue cheese, crumbled
Instructions
Place the Apricot & Maple Sweet Pepper Jelly (Retired) into the microwave for 30 seconds to slightly warm, then add vegetable oil, salt and Dijon mustard; whisk the vinaigrette to combine and set aside. Place spinach/arugula leaves in a large bowl, top with dried cranberries, walnuts and blue cheese. Drizzle vinaigrette over the salad and serve. Enjoy!
